Restaurant Tivoli, Chatel-St-Denis

The Cafe Tivoli in Chatel-St-Denis is simply one of the best place in the canton Fribourg to eat the “fondue”, the popular plate that consists of melted cheese where you will dip bread or potatoes.

Chatel-St-Denis is a small city located at the south of the Fribourg State, just above the Lake of Geneva. Even if there are a few other dishes on the menu, most people will come to the Tivoli to eat the fondue. You can choose either “moitié-moité”, which means that it will be made half from gruyere cheese and half from vacherin, another typical cheese from Fribourg. You can also eat a fondue made only with the pure vacherin cheese. This one is more solid, creamy and mild, often only warmed by candles. I prefer to use hot potatoes with this fondue. The moitié-moitié is warmer, saltier and more liquid, which makes it easier to eat with bread.
